A traditional Portuguese winter soup. Great for getting your vitamins and fiber in these dark months! I think this is a nearly perfect balance of veggies, protein, and just about nothing else, as far as both flavor and nutrition go. Makes about 4 bowls.
2 bunches organic kale
1 organic medium potato
1 organic garlic clove
Bouillon for 6 cups broth
1 package of spicy or paprika-y free-range sausage
A little olive oil, salt, and pepper
Dice the potato and bring the broth to a boil. Cook the potatoes while julienning the kale by rolling the leaves up and slicing thinly. Slice the sausages thinly too, and chop the garlic.
When the potatoes are soft, puree the soup. Sauté the kale and garlic in olive oil over high heat, stirring, just until the kale’s color darkens, and add to the soup along with the sliced sausage. Taste and adjust seasoning. Cook soup for about five more minutes and serve.
